Spaghetti, Tuna and Roasted Tomatoes Sauce.

This is another easy peasy pasta meal that is easy to put together and tastes amazing. The kids will definitely love it. If vegetarian just leave out the tuna.

Ingredients: Spaghetti of choice, One kilo ripe tomatoes, two cans tuna, Basil dried, one tbsp red wine vinegar, olive oil and salt and pepper to taste.
Preheat your oven to 200° C, slice your tomatoes in half and arrange on lined baking sheet. Place the garlic cloves in between and one bay leaf, drizzle the olive oil, salt and pepper and bake for 30 minutes or so till they shrivel a bit.
Peel the garlic and let them cool a bit before blending to your preferred consistency.
In a pan, add the tomato sauce on low heat.
Add one tsp of dried basil and little splash of the red wine vinegar. Simmer a bit.
Add the drained tuna and let it heat through. As you make your pasta as per the instructions on the packet.
Once pasta is ready, drain and toss in the tomato tuna mixture.
Plate and serve. Yum!
