Simple Celery Soup.

There is something comforting about eating a bowl of soup on cold mornings, or when it is raining outside, or when you are feeling a little melancholic. Soup will always cheer you up.

Here is a simple soup recipe that is perfect for such moments.

One small onion, four cloves of garlic, minced, I bunch of celery, 2 large potatoes, cubed, 1 tbsp of butter, salt and pepper to taste.
Heat your sauce pan and add butter, I added a tsp of oil as I didn’t want the butter to brown too fast.
Add your onion and garlic, cook a bit then add the chopped celery stalks.
Add your potatoes, seasoning and spices of choice, mix well.
Add your water or vegetable stock If you have. Just enough to cover the potatoes, let it come to boil then cover and lower heat let them simmer for about 20 minutes when the potatoes are fully cooked.
Blend to your preferred consistency.
Serve the soup hot after garnishing it.
I garnished with some toasted sesame seeds, a dollop of cream, crisped celery leaf and a small pinch of nutmeg.
